Spice Cake with Star Anise
- 1 tsp baking powder
- 1 1/4 cups coconut flour
- 3 tbsp coriander seeds
- 3/4 tsp sea salt
- 1 cup sugar
- 5 star anise points
- 1 large egg ((grass-fed))
- 2/3 cup soy milk
- 1/2 cup farina, uncooked
- 1/2 cup butter, softened ((grass-fed))
- 2 large egg yolks ((grass-fed))

Begin by preheating your oven to 350 degrees and then grease a round cake pan approximately 8 inches by 2 inches.

In a large bowl, sift the baking powder, flour, and salt together.

With a spice grinder, grind together the star anise and coriander seeds until completely ground up.

In a large mixing bowl, beat together the sugar and butter until the mixture is fluffy and light.

Add in the ground spices, flour mixture, and remaining ingredients.

Beat until well combined.

Evenly pour the batter into your cake pan and then place in the oven.

Bake for 50 minutes.

Remove from the oven and allow to cool for 10 minutes.
